Stollen is a bread-like fruitcake made with yeast, water and flour, and usually with zest added to the dough.
Marzipan (or almond paste) may also be used as a cake ingredient, as in stollen.
Within each stanza, the structure is that of the bar form, with two sections that share the same rhymes and music (stollen), followed by a third (abgesang).
