Skyr is a popular Icelandic yogurt-like product (actually a very soft, low-fat cheese).
I had delicious skyr, a kind of creamy Icelandic yoghurt, with blueberry sorbet.
The dish also included some frozen skyr, which is a soft cheese from Iceland that is quite yogurt-like.
The butter was whipped through with skyr – a cheese from the fermented milk of Icelandic cows – which gives great lightness and a soft tang.
