Her name comes from pancetta, a type of smoked bacon.
The sauce called for predominantly lean veal filet along with pancetta, butter, onion, and carrot.
In all, it is 80% lean meat, of which 25% will be prosciutto (ham), and 20% of pancetta.
Following this, tomatoes and wine are added, then the mixture is cooked further with a soffritto of onions, garlic, prosciutto, pancetta and some other ingredients.
It also uses pancetta in the base of the sauce.
This is enhanced with rice, chopped pancetta or bacon, cured ham, parsley, garlic, a pinch of cinnamon, salt and white pepper.
