Tuna is the most common fish but also red snapper, shark, bonito, sailfish, lobster, conch, octopus and other seafood is caught.
Seafood is widely used and bonito is present in the typical "sorropotn" or marmite.
Among the species most widely pursued are striped bass, bluefish, bluefin tuna, false albacore (little tunny), bonito, tautog, flounder and fluke.
Bonito may not be marketed as tuna in all countries, however.
Okinawan cuisines' condiments consist mainly of salt, miso, bonito flakes (katsuobushi) or kombu.
