Due to recession "aloo" (potato) had been used instead of meat.
The aloo gosht is covered and left to simmer until the meat becomes tender.
It consists of potatoes (aloo) cooked with meat (gosht), usually lamb or mutton, in a stew-like shorba gravy.
Popular lunch dishes may include "aloo gosht" (meat and potato curry) or any vegetable with mutton.
The most popular is "aloo pitika -" (mashed potatoes) garnished with raw onions, mustard oil, green chillies and sometimes boiled eggs.
In their local dialect, they call it "kuri aloo", meaning wood potato.
Aloo mutter is also available in ready-to-eat packets which need to be heated and served.
Saag aloo is commonly served hot, and topped with ghee (clarified butter).
