Espresso should have a vibrant aroma, potent flavour and velvety, hazel-coloured head of foam, known as crema.
Oh for a good coffee... just being anywhere where somebody knows what the word crema means would be satisfying to me right now.
The secret to a perfect coffee is to have the water at 90C as it runs through the machine, so you get a beautiful crema.
